Garden-to-Table Recipe: Tomato Antipasto

Is there anything better than a fresh-picked garden tomato?!

I long for garden-grown tomatoes all year. But here in the Midwest, our window of growing is narrow and they have a tendency to come all at once.  When I'm drowning in my end-of-August harvest, you'll catch me Googling "garden fresh tomato recipes" on the regular. I enjoy them in as many various meals and I can while they are freshly available to me, and feverishly preserve anything I can't eat.  There are so many garden-to-table recipes we can savor throughout the seasons, like my canned tomato sauce recipe!

I wanted to take a moment a share with you a favorite fresh garden tomato recipe of mine. It’s a great starter or snack that can be quickly assembled - perfect for a last minute get-together or summer bbq.  I can’t claim I created it, however, I think it’s a great simple & healthy recipe to pass along.  This garden-to-table recipe adds a fun twist to all those tomatoes and cucumbers that are coming in hot right now! 

Garden Fresh Tomato Antipasto with Cucumber Recipe

INGREDIENTS

  • 2 cups chopped Tomatoes

  • 2 cups chopped Cucumbers

  • 2-3 Tablespoons of fresh chopped Dill ( if using dried dill, cut back and add to taste) 

  • Drizzle of olive oil

  • Salt & Pepper to taste. 


DIRECTIONS

Prepare all ingredients and combine in a dish that you can cover. Let it sit for an hour to marinate and store in the fridge. 

Serve with your favorite crackers, tortilla chips or enjoy by the spoonful!
